The Yerba Mate (Ilex
Paraguayiensis, Paraguariensis) is a tropical / subtropical
plant that
needs high temperatures and humidity for their growth and development
(up to 1500mm of annual rains).
The mainly producing Countries are Argentina and Paraguay, and with much smaller yield the South of Brazil.
Their massive consumption is in Uruguay, Argentina, Paraguay and in the south of Brazil.
Its natural flavor in infusion is bitter slightly sour and its dark green coloration. For their preparation in our country recipients dull word are used that derives of the Quechua
mate that means recipient. The same ones can be of non porous materials
like glass, porcelain,
ceramic, or porous materials as pumpkins, wooden mates etc. The frequent drawees prefer porous mates (preferably pumpkins) which should be cured previous to their use allowing them to rest 48 hs minimumly with
yerba mate humidified with water to 80 º of temperature. The Preference for this recipient type resides in that taking the infusion in a porous mate this it maintains in its structure the flavor.
The preparation methodology is the following one:
It is filled the mate with yerba
mate until ¾ parts of the recipient, their mouth is covered, it
invests it to him and he/she moves it so that the little
particles characteristic of the mill is in the superior part and don't cover the bulb, he/she becomes moist the herb with lukewarm water and
it gathers of smaller to bigger, the bulb is introduced in the part with smaller
herb content and it is added water to 75º /80º only wetting around the bulb, and after several barleys,
it leaves wetting the whole herb little by little, with that which stable pleasure is achieved to the long of the whole
mateada.
The mate is the national drink of Argentina and the element of use more widespread
relative, I supplement forced of intimate meetings that it makes happy, he/she gives spirit and it serves at the same time of tonic, hobby and distraction.
